good eats

People ask me how I have the time to cook healthy meals. Cooking with frozen veggies makes life easier. There are so many really fantastic seasoning packet thingies in the supermarket. I can cook a decent meal in less than 30 minutes, using stuff in my pantry as well. EVERYONE has the time to make cook better for themselves. You just have to want to use it.

Ideas for recipes de mi cocina:

  • Spicy Shrimp Pesto & Green beans almondine:
This meal consists of whole wheat spaghetti, frozen cocktail shrimps, a packet of pesto seasoning, olive oil and chopped garlic. You can add frozen veggies, spicy peppers and grated cheese. For this, I used a packet of green beans with almonds to toss into the mix. I also used hot cherry peppers, from a jar. This is a a QUICK and yummy meal to prepare, making you look a lot more gourmet than you actually are.

  • White Chili
Take a pound of ground chicken or turkey (as lean as you desire) and cook it up. Add cannellini beans (white kidney), White chili seasoning, onions and peppers and anything else you want in your chili. Top over brown rice, add cheddar cheese or just eat it plain. Full of fiber and protein and very tasty.

  • Feta and Spinach Dip
4 cup spinach, fresh, chopped (about 2 oz)
1/2 cup light cream cheese
1/2 cup fat-free sour cream
1/4 cup crumbled feta cheese
1/4 cup chives, fresh, minced, divided
2 tsp fresh lemon juice
1/4 tsp black pepper
1/4 tsp table salt, or less to taste (optional)

    Place spinach in a small saucepan with 2 cups of water. Bring to a boil over high heat and then cook for 1 minute; drain well.


    Place spinach, cream cheese, sour cream, feta cheese, 2 tablespoons of chives, lemon juice and pepper in a blender; puree. Taste dip and add salt if desired. Spoon dip into a serving bowl and sprinkle with remaining tablespoon of chives. Yields about 3 tablespoons of dip per serving.
